It is likely that the water temperature gauge itself is broken or its wiring is poorly connected, because the water temperature is unlikely to change too quickly from high to low. Check the water temperature gauge and wiring first.

The snowmobile water temperature gauge kit should have three wires. I don't know what color your wire is. For now, it's called A (positive pole of power supply), B (negative pole of ground wire power supply) and C (sensor wire). During commissioning, connect the positive pole and negative pole of the power supply to both ends of the battery respectively, and short-circuit the sensor wire and negative pole wire. When there is no short circuit, the pointer is at the low temperature. After the short circuit, the pointer is at the highest temperature. This means that the debugging is correct, and the sensor wire can be connected to the temperature sensor probe.
